Georg Jakob war als Student in Erlangen und Göttingen (1774 - 1778), dannRechtswissenschaftler in Göttingen (1782 - 1784), Oberamts-Assessor inAlerheim (ca. 1784 - 1788), später Regierungsassessor in Wallerstein,1793 auch Konsistorialrat und ab 1796 Hof- und Regierungsrat inOettingen. Er war also eigentlich Rechtsgelehrter und hat alsoettingischer Regierungsbeamter zeitweise auch das kirchlicheKonsistorium mitgeleitet. Sein Grabstein findet sich außerhalb vonOettingen auf dem Friedhof der Kapelle St. Anna.
